Setting up Docker and Plex few questions

I have been running unraid for a few years now but only as a NAS and haven't used OS 6 before and very new to the Docker. I just did a clean install of os 6 on my server, but left all my data on my drives and added a 128gb SSD cache drive.

I have been reading some of the tutorials but I am still confused. Per the guide when I enabled Docker I used /mnt/cache/docker.img. I was then confused on where to add Plex Media Server.

I want to use it on my cache drive and I also saw that people keep using an appdata share. Is this something I create on my own? Based on what I could find it looked like I needed to and made my own appdata share as cache only. so I have it setup as /mnt/cache/appdata/PlexMediaServer and it is working but then after I created it I now see another appdata folder. Was this supposed to happen? On my server I have a user share called Movies however I do not understand if I should set this to use cache or cache only because of the Mover. I do not see how its supposed to be cache only but then that will only give me the 128gb of storage.  Lastly, per what I have seen I made a volume mapping called /movie and then /mnt/user/Movies/ Why do I need to make this as I also had to tell plex to look at the Movies folder when I went into the webGUI?
