October 29, 200916 yr I'm copying a ton of data from my windows machines to my unraid server, which used to be a windows server that operated just fine. I have had to restart my data copy a few times (just because of time contraints, needed reboots on my workstations etc) and when it restarts it is recopying large amounts of data because it says the files on the source computer are "newer" than what's on the unraid box.... I also do not believe that unraid has the updated Daylight Savings Time info in it, as my box is an hour off.

I also do not believe that unraid has the updated Daylight Savings Time info in it, as my box is an hour off. Have you downloaded and installed the timezone file for your location? If not, then you will not get automatic time setting of DST. The basic process is described here: http://lime-technology.com/wiki/index.php?title=UnRAID_Manual#Date_and_time Once you download and put into place the appropriate "timezone" file, and then select "custom" as the time-zone on the settings page, all will work as it should. October 30, 200916 yr fyi besides the bad link the manual entry for this leaves out the small detail that "(custom)" won't appear in the Time zone dropdown list without first stopping the server.
