I just realized that my onboard network controller only supports 100Mb and want to add a 1GB Intel NIC. What is the best way to do this? Should I deactivate the onboard card in the BIOS and boot with the new card in place? Will Unraid recognize it? Or do I need to change something on the command line?

Exactly.  Deactivate the on-board NIC.

Will Unraid recognize it? Or do I need to change something on the command line?

It should recognize ithe new

NIC if it uses a known chipset. (if Intel, odds are VERY high it will be recognized)
