I recently upgraded from unraid v5 to v6.  Part of that upgrade was converting from a plex plugin to a plex docker.  Ever since I've upgraded, every so often my server will become slow and unresponsive, usually while playing a video through plex.  Telnet-ing into the unraid server reveals plex is consuming all my processor power performing some transcoding job, even though the video has stopped playing.

 

Has anyone else experienced this?  Before upgrading, I could easily run multiple HD streams from plex without the server cracking a sweat.

Which Plex Docker are you running?

The limetech plex docker -- https://github.com/limetech/docker-templates

Switch to a better supported plex docker container such as LinuxServer.IO.

Also, install Community Applications plugin if you havent done so already. It really gives you a proper docker experience when looking for apps to install.
