Do you mean for one VM? If the VM OS has support for multiple monitors I don't see why not.

Why?  unRaid at best by itself is only a text display on the monitor and very rarely used.  But nothing is stopping you from actually using the card.  But only one monitor work work

If you don't use the video card with a virtual machine (vm), then only 1 monitor work work.

 

If you run a vm, then all monitors will work on that vm

or maybe put another way.  If you are planning on running Windows on your computer then yes you can use all four monitors
