I am looking to try your product in an offline environment. Is there a way to sign up for a trial version without putting the machine online?

Not that I am aware of. I think the trial and beta versions require communications with the license server to start the array. Purchased licenses of the release version do not have that restriction, so I think your only option would be to temporarily allow the machine internet access to start the array, then you could disconnect until the next time you needed to start the array again, or purchase a basic license for evaluation, and upgrade if it meets your needs.

Unless you only need the basic NAS functions in which case you can give it a test drive on v5.  But that version is very limited in functionality compared to what v6 offers (docker, vm's, etc)
