What type of problems could I run into if the SSD dies as a cache drive in 6+ months?

If you're not running a cache-pool, then if the cache drive dies:

 

You will lose the data on it (but you can easily back up the appdata to the array)

When the cache drive dies, it will also have some adverse affects on accessing your shares, since it is part of the user system.  After removing the dead drive, your shares will be back to normal
