I would like to use a spare 120GB SSD as a storage device for all of my games and programs using the Unassigned Devices plugin. I have the SSD ready to go but cannot create a Share on it, can somebody provide me with an example of their current similar setup?

Under the Unassigned Devices section, make sure the SSD is mounted.  If you want to share the disk so the disk is available and appears like an unRAID share, slide the share toggle switch to on (blue).  To use this as a 2nd disk in a VM, edit the VM properties and click the (+) under Primary vDisk Location to add a 2nd disk.  Select Manual, and set your disk location to /mnt/disks/unassigned_device_name.
