Move from Bare metal to VM?

I have a spare dual Xeon server with 20gb of RAM.

 

At the computer shop where I work we run 4 machines in baremetal, one is a Unix machine that runs the till and job system, one machine runs pfsense, o e machine runs server 2012+exchange, and 1 machine runs Serva which is a pxe boot program that allows booting of machines over the network.

 

I feel like everything bar the final machine cold be virtualized, the only reason i wouldn't consider virtualizing the Serva machine is write speeds as we image customers machines to it so need the full 100MB/s that gigabit gives us.

 

What would be the best way to move the remaining 3 machines to VM? Could I just image them using reflect the restore them into a VM? Would pfsense benefit from multiple physical NICs as it does in the bare metal machine?
