A share exists for every root level folder on the array (including cache). (Unless they begin with a '.'') You don't have to use the GUI to create one. If you have disk shares turned on, you can create a root level directory and you'll see it show up as a share, and then if you remove it, you'll see it go away. So it is useful to think of a user share as a reflection of the fact those folders exist, than something the GUI controls. When you ask the GUI to create a share, behind the scenes it creates that directory inn one disk.

To make things a little more complicated, user shares can have configurations which the GUI does create. They contains things like includes and excludes, split level, and allocation method.. If the.root folder(s) get deleted, but that configuration file still exists, I believe it will still show is in the user share list, and deleting the share via the GUI deletes the config file. It may also remove the root level directories if they are empty- I'm not sure. But the GUI does not delete your files, which it's a good thing! :)
