[Solved] [6.3.5] Issues with Docker containers (possibly more general underlying isue?)

I'm a new user (been running Unraid about a week so far) and am running into a lot of issues running Docker containers but I'm wondering if its a more general error.
Some containers work fine - I have Sabnzbd and Dolphin working fine, but I get what I think is the same error when trying Sonarr, Radarr or Emby.

According to the Docker logs, the error snippet is: IOError: disk I/O error

 

I'm no expert but I assume this would mean physical disk errors? 2 out of 3 drives are brand new, and no SMART errors as far as I can see. Also attached are my full diagnostics.
Hopefully someone will be able to help - been struggling for 4 days and getting nowhere!

    1. Tap the lock icon next to the address bar.
    2. Tap Permissions → Notifications.
    3. Adjust your preference.
    Chrome (Desktop)
    1. Click the padlock icon in the address bar.
    2. Select Site settings.
    3. Find Notifications and adjust your preference.
