I have unRAID plus in action.

 

The Server doesn't have the best/optimal Hardware.

 

Can i use that and change later the Hardware problem-free? (only reposition the USB-Stick?)

i have 11TB in action.

Yes, the license is tied to the flash drive, you can use it with completely different hardware.

Can i use the self license on 2 System?

Not at the same time, you need one license per server.

Sometimes it can be helpful to use the unRAID Trial license (30 days) on a new USB stick while building a new system.
