Today I have a linux soft raid 5 with 3 1,5Tb  disks

 

I want to create a new unraid server and move the data, around 2,2Tb

 

I have one extra 1,5T drive and can borrow one of the raid-5 drives

 

Can i buid the unraid setup with two data disks and then adding parity after the data has been moved `

 

And how?

Yes

And how?

Exactly as you described.  Do not assign a parity drive until after the data has been moved.  Only assign data drives.
