I am looking at the super micro server cases and they take an eatx board, but those are real expensive.  Will a standard tax board fit in a rack mount supermicro case that call for eatx?  If so will I just need extenders cables etc?

    You may need longer cables, but it should fit fine.

    if you are using supermicro parts, best to contact their support team with the case and board you are looking at. (just in case they have special airflow requirements or air shrouds)
