I am wondering how to access all my data that is stored on the drives in my server now that my trial is expired. I want to just move it to an external hard drive.

Boot with pretty much any linux distro and you should be able to read and write to your drives.

So i booted with Ubuntu and only one of my drives are accessible. When i try to access the others it gives me Error mounting /dev/sdd1 at /media/ubuntu/.... Command-line /mount -t .... exited with non-zero exit status 32: mount: wrong fs type, bad option, bad superblock on /dev/sdd1

missing codepage or helper program, or other error. Any idea whats wrong?

An alternative is to simply request an extension to the trial (or setup another trial stick), mount the external drive using unassigned devices and copy the data over.

What drives were assigned where? Parity drives have no data, and if you had multiple cache drives they may need special commands to mount since they are pooled together as a RAID volume.
