(solved-ish) Docker images start but... can't connect!

I'm very familiar w/ docker and networking. I had a "proof of concept" machine built before I bought and moved my data over... well....  My actual machine isn't working and I'm not exactly sure where its broken. The docker image logs seem to be lacking the information i'm looking for. In my searching I found that it might have been the network driver, so I switched network cards, but the problem persists. I've also deleted and re-added the images and the docker.img to no avail (all the basic things).

I'm sure its something stupid, but I just can't put my finger on it. It honestly feels like a nginx issue where it can't connect... but I dunno.

attached are my diagnostics...

EDIT:

So I thought it might be the USB stick, I've read a lot of issues with USB 3.1 drives (which i was using) so I tested w/ USB2 drives and it worked fine. Rebuilt my USB 3.1 drive and it works again, I dunno what the actual problem was... weird issue. But its fixed.
