I saw this post which is helpful -

 but i just want to clarify something,

 

I have 2x 250GB SATA SSD's right now and my plan is to replace them with 2x NVME 512GB drives.

 

Should i add both new drives then balance then remove the old drives or should i only remove the old drives 1 at a time, just want to confirm the order so i dont break anything

You can add both drives at the same time but you can only remove one at a time (using the GUI, you could remove both together but you'd need to use the command line)
