Rollback Docker to Previous Version (Specifically Plex)

I've been searching for the best way to do this, but haven't figured it out yet.

 

The recent update of Plex has given me some problems, so I just want to roll back to the previous version that I had installed. What's the best way to do this for dockers?

    You need CA Backup / Restore Appdata.

    You need to "tag" the repository with an appropriate version number instead of leaving it black (which defaults to :latest)  Ask in the particular support thread for what tag you should be utilizing
