Automatic transcoding and Plex on old hardware

I have a setup with really old hardware, running unRAID v6.5.0

MB: M2N68-AM Plus
CPU: AMD Athlon™ 64 X2 Dual Core 4600+ @ 2.4 GHz
RAM: 2 GB

 

The dockers I use are Deluge (binhex-delugevpn), Couchpotato and Jackett.

 

As the hardware are so old I only use my server as a fileserver, with SMB and NFS.

I have two media boxes running Kodi, so when I stream media there is no load on the CPU, only bandwidth.

I was wondering if I could setup some dockers to automatically transcode my movies and TV-series so that I can use Plex to stream directly to my mobile units and Chromecast? Is this possible? And preferably with subtitles?
 

EDIT: It does not necessarily have to be Plex.

Doesn't plex do this?  Look at the optimised version settings within plex?
