Help with CPU and MOBO recommendation

Hey guys, looking to upgrade my unraid server to get some more CPU power. I have a Ryzen 5 1600X and it's really not powerful enough. I'm thinking one of the Xeon E3 or maybe 2 E3's. I want to be able to run several plex sessions at once as I plan to share my plex access with several family members across multiple houses. I also am planning to run: Hydra, SAB, Sonarr, Radarr, and Ombi, and some automation all on the same server. I also want to setup Pfsense so the Mobo would need two eth ports.


If anyone could recommend a good Mobo, I don't care about flashy lights or shit, just a reliable mobo and Cpu(s) that should be almost overkill for what I'm looking to do. I'm wondering if one powerful CPU is better than 2 E3's together?

 

If anyone has any recommendations that would be great thank you! :)
