Is Parity Required?

Before I get raked over the coals for this question let me explain the need and plan. I never ran an unRaid box with no Parity do I don't even know if it's possible.

I just upgrade 3 drives in my main box which allowed me to remove 3 - 2 TB drives. I have a small Lenovo Server box and my plans are to crank it up for the sole purpose of running Unifi Video Docker and hopefully Unifi Protect if Ubiquiti eventually releases a port.

This will be for a residential Video setup and if I were to lose a data disk, a quick wipe and re-setup wouldn't be that big of a deal. FWIW the Unifi NVR's and gen 2 Cloud Keys themselves don't have any protection.

So to make a long post short, can I pass up using my third disk for parity and have a 6 TB share without unRaid or Fix Common Problems screaming at me daily?
