X299 vs X399 vs Z390 need help to select configuration

Hi Guys.
Im looking to upgrade my Unraid machine that use close to 100% CPU and memory most of the time. It have a hard time encoding HD content in PLEX.

This the current setup: (Which is REALLY not good enough)
ASUSTeK COMPUTER INC. - H81M-E
Intel® Core™ i3-4330 CPU @ 3.50GHz
8GB RAM

1 WD Red 8TB

4 Seagate 8TB Ironwolf
3 Seagate 8TB Archive
2 old 250 GB cache drives

 

Currently I Run several dockers; Sabnzb, Domoticz, sonarr, radarr, PlexMediaServer, AirvideoHD, I do have some more dockers that I start if I need them but then I first have to close some of the others.

I would also like to run a couple of VMs, Windows 10 and Ubuntu.


Im looking at 3 different options and wonder which one seems best and most reliable. Cost is not the most important parameter. I think all of these configurations are performant enough for my needs but is there some component that is known not to work or behave bad in the lists below?  The price in the list is in Swedish kronor which is basically 10 SEK = 1$.

 

These are the same for all 3 configurations

PSU Corsair RM850X V2 850W    1199:-

SSD WD Black NVMe SSD M.2 250GB    2×750:- (Replace the old Cache drives)
 

Option 1: AMD Ryzen Threadripper with 32GB Ram, I have intentionally selected 4GB modules to fill out all slots on the motherboard

CPU    AMD Ryzen Threadripper 2950X 3,5GHz Socket TR4 Box without Cooler 9990:-

Motherboard   MSI MEG X399 Creation 5298:-

DDR4 memory    Kingston HyperX Fury Black DDR4 2666MHz 8GB (HX426C16FB2/8) 4 × 712:-

Total cost around 2200$

 

Option 2: Intel I9 with 32 GB Ram and a X299 Motherboard

CPU   Intel Core i9 9900X 3,5GHz Socket 2066 Box without Cooler 10689:-

Motherboard   Asus ROG Strix X299-E Gaming 3890:-

DDR 4 memory   Corsair Vengeance LPX Black DDR4 2400MHz 2x8GB (CMK16GX4M2A2400C16)  2×1103:-

CPU Cooler   Noctua NH-D15 829:-

Total cost around 2000$

 

Option 3: Intel I9 with Z390 chip, have to be completed with a controller card since the motherboard only have 6 SATA slots

CPU   Intel Core i9 9900K 3,6GHz Socket 1151-2 Box without Cooler 5290:-

Motherboard   Asus ROG Strix Z390-F Gaming 2290:-

CPU Cooler   Noctua NH-D15 829:-

I will chime in and say i have the threadripper first gen and love it.   I can't seem to throw too much at it.   I'm about to install it in a 42 bay case to try lol.  Currently have 22 drives and 19 Dockers with 6 VMs running 24/7 and rarely see more than 20to30% utilization of cpu with 3 of the VMs as Windows server.  One of the Dockers as a 4k Plex with at time 18 viewers.

 

I do have 128gb ram though.

 

So I'm biased.
