Hey everyone if I noticed that when transcoding with Plex my CPU hits 100% usage on all cores, my question is if I assign let's say 2 cores to the Plex docker can my other containers also use those 2 cores?, Or are those now exclusive to a Plex.

You would make those cores exclusive to plex by pinning any and all other containers to other cores.

IMHO, if plex is the priority, then set it to have priority over all other containers and dont pin it to anything. See the docker FAQ for what to add to the various containers for this behavior
