From the FAQ:

Thank you for this but it doesn't quite cover what I am trying to achieve,

I am currently on a 2 disk SSD Cache Pool which I want to replace with a single NVME cache Pool

Can I do the following.

1, stop the array

2, remove one of the disks from the cache pool in the settings

3, add the new NVME into the pool

4, restart the array to let it balance

5, stop the array

6, remove the smaller ssd leaving just the larger nvme disk

7, start the array

Is this correct?

Thank you

I thought I answered the question you asked. Let's have another go. Have a look at the FAQ entry immediately above the one I gave you, also by johnnie.black. Note the caveat that's underlined. Bad things could happen if you ignore it.

So do the replacement, then do the removal.
