Need advice on update/migration

I am looking to upgrade my server while migrating from freenas to unraid. Current setup is a Xeon 1246v3 with 16GB of crucial CT102472BA160B.18FED ECC memory.  I have 5 3tb wd reds. I am only using this server for Plex for now and have maxed out my capacity. PSU is an FSP280-40EPA.

 

I am wanting to get either shuckable 8tb-10tb drives or 6tb-8tb SAS drives. I am satisfied with the performance of the 1246v3, but if I need more transcoding power, could I just add a GPU like a p2000? My motherboard is currently maxed out with 5 sata ports so I am thinking I could just add a SAS/SATA PCI-e controller for additional ports. I am also using a 280 watt bronze PSU. 

 

I am thinking the best option would be to get a sas/sata controller, add another 16gb memory and just switch out the drives. I will also be getting a new case to house everything, should I consider getting a new PSU?

 

Would like any advice I can get it. Thanks!
