I updated my Plex docker this morning like I have done many times in the past.  After the update finished the Plex docker completely disappeared from the Unraid GUI.  I am running Unraid version 6.3.5

Did you check via terminal if it's still there?
 

docker ps -a 

And if you can manually start it via docker start idofthecontainer

Your docker image may be full or corrupted. You could rebuild your docker file, If you delete the image and then restart docker it will create a new empty image. Settings>Docker Advanced View then you can go to the Previous Applications section of APPS and reinstall the containers.
