Long story short i couldnt start any VM because of problems with the groups.

Saw online that you can deactivate ACS Ovride to solve that.

After that i can start 1 VM at the time, any suggestions what to do to be able to run both at the same time ?

Different motherboard with better iommu groups.

Simultaneous multiple passthrough VM's need specific hardware, it's best to find someone running a hardware combo that is already in use doing what you want and copy it part for part.

You made a typical new user mistake. You split 16GB RAM per VM and forget that Unraid itself needs memory to run.

Cut it to 12GB / VM and then see if you can run both at the same time. Then slowly increase RAM until things crash then dial it back a little.
