Getting started - what about existing disks, various filesystems?

I'm looking to get started with Unraid, but never used it before.

From the video's I understand that you create a bootable USB stick and that Unraid will boot from this stick.

 

Q: Does this mean that Unraid will use pre-existing disks with their own filesystem? (If this is correct, I'd like to step by step add all my various drives to my Unraid system.)

No, any array or cache device needs to be formatted by Unraid, even if it uses a supported filesystem, you can mount some existing filesystems with the Unassigned devices plugin.
