Windows 10 VM missing vcores

Hello, ran into a strange issue last night and can't seem to find any information about this if anyone else has had an issue. 

 

I have built a Windows 10 VM with an RTX 2060 and an NVMe ssd passed through. To get the Nvidia Error 43 to stop and get the GPU passthrough working properly, I had to use SeaBIOS which has worked without any issues. 

 

I initially setup the VM with 6 cores (using an AMD 3700x) but went to update it to 8 cores, but Windows will only show 6 cores regardless of rebooting or scanning for new hardware. 

 

Any ideas how to force the VM to see the new cores?
