Hello. I currently have my "Games" share set to include all disks within my array. It's set to high-water, but since I only recently added more drives, its completely stored on disk 1. I would like to exclude disk 1 moving forward, and allow it to high-water on all of my other drives. When changing this setting, will it move things over automatically with the mover, or do I have to invoke it with something like unBalance?

You'll need to move manually (disk to disk only, not disk to share or share to disk) or use unBalance.
