Looking for the best opion for VM

SPECS:

CPU: i7 3830

Motherboard: Asus P9X79

Memory: 32 GB

GPU: Nvidia 750 TI and AMD 4650

I wanted to do a VM that would function as a Media center to use Kodi, Netflix, Prime video and others, as well as do steam streaming from my main PC. I tried VaporOS which is a custom SteamOS distribution but I'm running into a lot of issues getting it working which appears to be common with SteamOS. Beyond that I'll be doing a docker for a Minecraft server and maybe a few other small things. I also plan to run all of this from it's own SSD since they won't keep any read data, aside from the MC docker which i'll probably have it do backups to the array.

Considering the specs and what i plan to use it, would it just be easier to put up either a linux, win 10 or even just an Android vm and customize it from there?
