How does unraid wake up after disks are idle? I cannot access disk after they are idle. I need to refresh server or restart array?  Is this normal?

Neither.

 

If you access a disk when it is sleeping it mus just spin up first.  Depending on the dis it could take up to 15-20 seconds. 

 

The program accessing the data will either wait or time out waiting.  In no case it is necessary to reboot unRAID or restart the array.
