Trying to install server 2016. video stuck at 800X600

SO I am trying to install windows server 2016 as a VM on unRAID. We are trying to move from our older iomega and winserver product onto unraid. I am in testing for the move.

 

I am having a problem seeing the actual server manager screen as they don't fit into 800X600 window the vm will allow.

 

The ram is stuck at 2meg. for the video in the VM with no where to change it I can find. How can I get more ram for video or just change the setting to something sane to work with!

Any help would be great! The os thinks 800X600 is the max allowed.
