First UnRaid Build Help for Plex and Maybe a Windows VM

Hi all, 

 

So I'm looking into building a UnRaid server, hopefully in the next 6-12 months. My primary use would be for a Plex server. I'm a Mac guy though at times might want to run a Windows VM to run certain software. I'm not a big gamer but wouldn't mind the ability to run some game emulators for nostalgia. I'd like to eventually build this out to be 100TB+ but I'll work towards that. My thinking is that I will have most every movie or tv show I'd like to watch (mostly above 7.0 rating on IMDB). I might let some friends use the server but it at the moment wouldn't be more than 3 or so people. I have a 4k TV so being able to have 4k content would be awesome though obviously it would take time to acquire. That said I'd like the ability to from a processor stand point. 

 

As for the basis of the server, I based most of it off this build guide https://forums.serverbuilds.net/t/guide-anniversary-2-0-snafu-server-needs-a-friggin-upgrade/1075. That said I didn't quite like the tower case options so I picked a different case. Also for whatever reason in PC PartPicker the motherboard wouldn't carry over so I pasted it in. Part of me wonders if I'm ok using that motherboard or if I should instead have only 1 processor and have my next build in the future be a rack build with dual processors. The drives I picked as I will upgrade them later, that said I'm cool with buying used drives or shucking drives. The price shown I expect to be slightly lower as I'd be buying stuff on eBay. Retail price of this build would far exceed $1k. Don't mind saving some money going used on stuff. Other cases I'd consider would be the Fractal Design R7 XL as well. Any suggestions, comments, etc appreciated.
