NFS Share as guest resetting permissions

Hello, firstly thank you for your help and I hope I am posting in the right place.  I could not find a past post with a totally similar problem.  I have an issue with permissions resetting after writing files to the NFS share.

The problem is repeatable across various platforms, linux and windows.  In this case a machine on on ubuntu 20.04 it has "STORAGE" NFS share from the unraid machine mounted in /sparky.   

Via NFS I created a new folder from Athena in /sparky/_Windows Software/System/Network/CableCreation 2.5G USB Network/

then I copied a ZIP file with the drivers for this device into the folder.


This happens quite regularly and seems independant of which platform is writing the files.  Guest access is allowed and the NFS share is being mounted 
After that I browsed the structure.  Security is not an issue as this network is air gapped.

I could not even change direction into _Windows Softare due to lack of permissions after the file writing.  I carried out the following steps in screenshots going through the structure using ls -la so you can see the permissions.  I also attached the diagnostic file.  To get access to the files after writing I have to use chmod or the docker safe permissions tool.
