Plex - This site can't be reached

I have read so many support threads and I still can't access my webui for plex. I am using the official docker from plex inc. Everything was working fine until I added a second m.2 drive to create a cache pool to improve my transfers to the server to add new videos etc. I have deleted my docker img and restarted it. I have uninstalled plex and reinstalled plex with no results. The log file for plex shows this, but then just keeps repeating the last lines. Please help. Please note that I am very new at all of this.

I wanted to post a quick update. I installed linuxserver plex docker and did a quick setup and it seems to be working. After digging around, I noticed that the official Plex Inc docker wasn't making a folder in the appdata folder, but linuxserver version did. Why would it no longer be creating this folder? Is there a way to completely remove the plex docker and all traces so that if i reinstall it, it will create everything brand new and work correctly?

Even though I didn't get any replies, I wanted to give an update. After a reasonable nights sleep, I decided to take another look. I noticed that my SATA SSD that I was using for my plex data was listed under historical devices. I was confused because I know I did't unplug it or remove it. Maybe a loose SATA cable. I opened up my server and checked cables. Everything fine. Then I remembered that one of the M.2 slots shares SATA 0 and 1. I moved the cables to different slots and viola!
