Changing vm disk size

So after about a week of fooling around, I have my two windows vms working and passing through all the appropriate hardware 

 

then my audio tech came in and announced we need another machine to run something else. 

 

I have a Xeon server with plenty of memory. 
 

currently scratch disks are two matching 500g ssds. The storage is two 1 tb ssds. 

How can I go about reducing the drive allocations, so I can add another machine?

 

Also need a third video card. If I am not accessing UnRaid from the slot one video card, can I allocate it to the third vm?

For the video card you should be able to pass it through to another VM, you will have to run your unraid headless, and manage it from a vm, or from another device.
