Newbie looking for advice

I have found 2 used servers. 1 with dual E5-2690 V1 and the other has quad E7-8880 V2. I want to run plex server and a couple gaming VM's and play with some other options. Both are close enough in price I'm not worried about that. I don't know if unraid even supports quad cpu's and would use them. Also not sure how much power the extra CPU's will use and if it would be a waste if unraid can't even use the extra cores. Any recommendations would be appreciated
