I just shucked a 8tb western digital drive and the drive is only showing up as 2.2 tb. Any suggestions why?

I've been running Unrid pro for the past 4 years without a single flaw. Use it for mass storage as well as a plex and transcode server.

I just tried installing openvpn-as and get this error in my log file "/var/lib/dpkg/info/openvpn-as.postinst: line 42: /usr/local/openvpn_as/bin/ovpn-init: No such file or directory". When I try and open the UI it refuses to connect.

Now that this is done running, it says metadata corruption detected. What do I do after this?

It isn't letting me start the array because it says that a disk is missing

Whatever you did there's no filesystem detected, if you know what filesystem was in use (xfs, btrfs or reiser) you can try running the appropriate recovery tools, but not very hopeful.
I left it at default, I believe default is xfs. How would I go about recovering the data?

It was running on the unraid server, I was accessing the server using windows shares (smb)

I had these drives in the unraid server before. I took out some older drives that I didn't need anymore. When I took the drives out I got an error saying "Too many wrong and/or missing disks!" so i turned off the server, took out the 2 drives I wanted to keep (1 parity and 1 disk) and ran the "New Config" task as it said in the wiki.

it wont start the server with the plugin because it detects that is missing drives
