i've logged mine on to help, its only a ryzen 5 2600 but with 8 cores/threads dedicated to boinc at the moment

i am running a simlar setup to the one your are proposing mine consists of the following:
AMD Ryzen 3 3200G
Asus Prime B450-Pro
16Gb Generic DDR 4 2400Mhz
2 x Crucial BX500 120Gb SSD RAID 1 for Caching
4 x 6Tb WD Reddrives
2 x 3Tb Seagate Barracuda Drives
LSI 9207 -8i SAS Card
Antec P101 Silent Case
Corsair RM850 PSU
Been running this config for 2 months on pro license an have not looked back from my Windows Home server days.
The simplicity and effectiveness of this has changed my workflow dramatically as the cache drive works flawlessly when working on files from the server and my last data loss from WHS was enough for me to rethink windows servers. I run a Macbook pro and a Windows based work machines plus multiple clients around the house a general NAS, no latency on any machine what so ever.
Only thing i might change is the CPU and go a 5400G instead of the 3200G for more threads and computer power in the future.

i would be looking at a B450 board at least, you will have better ram, cpu compatibility for future proofing, maybe look at a Ryzen 3 3200G processor instead if you can, the improvement over the athlon would make a difference when running VM's as one is a true 4 core processor and the other is a 2core with SMT.
my current server is
AMD Ryzen 5 2600
16Gb Kingston DDR4 3200Mhz CL16
Asus B450 Prime MB
2 x 250Gb Crucial MX500 Cache Drives
4 x 6Tb WD Red drives with 1 in parity
Corsair AX850 PSU(yes this is overkill but it was lying around not in use)
Antec P101 Case
This gives me the ability to add more drives in the future with a SAS Card and all my drives will run off that except the cache drives.
Currently running no VM's as a I dont have a need for them, but i run a plex server for family and friends, Folding@home with 6 threads and consistantly get good 1Gb transfer speeds from my main rigs.
