Losing GPU functionality after some time

After a cold boot, GPU is working as expected (passed through to a Jellyfin container with no issue) - but after some time the GPU is no longer available

I've found this in the system logs:

This looks like the GPU is put in a "sleep" mode and fails to wake? I haven't done any particular settings for this, and I'm not sure what I can do
