Plex Container Issues/Unable to Detect New Media

Yesterday I notice out of the blue that Plex was not picking up new media added to shares

 

Tried:

Verifying media is playable

Rescanning problematic library

Remove problematic library. When re-adding Plex says it can't save the changes (permissions?)

Removed the container/image and reinstalling

Checked the docker log. Nothing suspicious.

 

Diagnostics attached. Thank you
