Setting Up UnRaid + VMs: Need Some Suggestions

I'm pretty new into NAS and Virtualization. I've spent around 30 hours in Linux environment to setup and optimize the WindowsVM. Unfortunately I hit some issues with high DPC lag (Win10VM), passing through entire USB controller, sound issues etc. It felt like whenever I was solving a problem, another one was popping up and it felt like the amount of gain I have over Linux Baremetal / WindowsVM wasn't compensating the amount of work and nerves I had to put into this project. So at the moment of giving up, wiping everything and going back to dual boot, I found unRaid and I am really hyped about it. It seems like it gives the best solution for what I want to have. I will be setting up my system this week but I have a couple of questions. But before that:

 

A) Here is my rig:

Mainboard: ASUS Maximus VIII Gene (mATX Z170 MB)

CPU: Intel i5-6600k with igpu

RAM: 32 GB DDR-4 Ram

GPU1: Geforce 1080 GTX

GPU2: Geforce 730 GT

PCIe: USB 3.0 Controller

PCIe: 256 GB NVME SSD

SATA1: 512 GB SSD

SATA2: 120 GB SSD

SATA3: 2 TB WD Red Hard Disk

SATA4: 2 TB WD Red Hard Disk

SATA5: 1 TB WD Red Hard Disk

SATA6: 1 TB WD Red Hard Disk

 

USB Controllers in total:

1x Onboard USB 3.1 Controller

1x Onboard USB 3.0 Controller

1x PCIe USB 3.0 Controller

 

B) How I'm planning to setup the system:

1) Running unRaid in the background (Using USB 3.1 Controller for the unRaid USB flash drive and iGPU for graphics)

2) Running MintVM, passing through the Geforce 730 GT card and the onboard USB 3.0 Controller to the VM (also streaming to the TV in the living room using Raspberry Pi, connecting Keyboard/Mouse to is as well)

3) Running WindowsVM, passing through the Geforce 1080 GTX and the PCIe USB 3.0 Controller to the VM

 

I assume using the PCIe NVME SSD together with the 512 and 120 GB SATA SSD for the cache pool is going to be a waste for the speed of NVME SSD, since it will be slowed down to the slowest cache disk I put in the pool. I am planning to use the following disk Setup:

 

UnRaid:

Cache: 1x 512 GB SSD

Parity: 1x 2 TB WD Red

Array: 1x 2 TB + 2x 1 TB WD Red

MintVM:

120 GB SSD Unassigned device

WindowsVM:

Passing through the NVME SSD

 

C) Questions / Suggestions

1) Do you think this is the optimal way to use the disks I have? Would you have other recommendations for the disk setup?

2) How fast is the read/write speed within the rig itself? I understand that if you are accessing a file in the cache from another physical computer, network speed is the bottleneck. Is it the same within the rig itself or will I get almost SATA SSD read/write speeds? Asking this question because I'm planning to have a Steam folder in the cache drive and I'm wondering if the loading times will be unbearable or not.

3) Do you think i5-6600k is powerful enough to run two VMs at the same time without being the bottleneck in the gaming performance next to 1080 gtx? Or should I upgrade to a i7-7700k? Note that I'm also planning to run a VPN-Docker in the future.

4) Last but not least: Am I missing any components to make this setup work?
