New Build - Multi-User VM's, Lite Gaming

Looking for recommendations on a first build. Migrating from a mac mini running ESXI at the moment. Currently running just small development VM's but looking to expand to adding home automation and 1 VM for lite gaming with GPU passthrough. Another one is a Cisco VIRL server that is ram intensive. Would also like the option to expand into using home streaming via Plex or Kodi.

 

Couple questions that I am seeing from other builds revolves around the storage. I am seeing other using drives in order of a cache drive, pariarty and data drive. What is the importance of this? I was hoping to use the m.2 for the gaming VM, the SSD for the cache drive and the rest for data.

 

Is this overkill for such a simple setup?
