Solutions

  1. benwards925's post in Docker container on Host network using wrong IP was marked as the answer   
    Turns out my Default Gateway was routed to 10.0.0.1
    Setting this to a metric of 1000 and then my desired gateway of 192.168.0.1 to a metric of 0 has fixed this issue.
