As an update, I've had a good amount of stability after removing 2 of my 4 memory DIMMs - I believe having 4x32GB DIMMs at 3200mhz may have been causing instability. I'm currently resolving a separate drive failure issue, but besides that things have been running smoothly. Going to mark this as solved for now.

I believe I investigated C states a while back when I first moved this server to an AMD platform, but I could be wrong. I'll dig into that after my parity check completes. Thanks for that thread link I had completely forgotten about this issue(and it's honestly pushing me to just swap platforms back to Intel lol).

Hey everyone, running into issues with my server where every so often my server hands and stops responding to any input including pings. Attached is diags, syslog from the past day or so can be find in this pastebin(syslog is 500mb so upload failed, if you want the whole thing let me know): https://pastebin.com/LwBMppfT It seems to happen once every few weeks at a minimum but I had a period for a few days where it would last less than an hour before locking up.
