I tried to go with this image on my first approach: https://hub.docker.com/r/erichough/nfs-server/ which would have been a much cleaner solution (uses export file, multiple exports, etc) But still was getting errors when forcing nfs4.

I'm also running into a lot of issues without v4. I currently cannot use Unraid as a backup using Longhorn's built in backup software as it requires v4, which sucks because Unraid is my primary NAS.
