Is there any somewhat simple way to backup and save my docker installs (plex, sonarr, sabnzbd, radarr) and then move them to Unraid once I get it installed?

    Probably not. Depending on how well you understand volume mapping you might be able to get the "appdata" moved over and configure the containers to use it.
