I have some disks from my first unraid build with 1 TB of downloaded stuff on it. Can I just put these in empty slots on my current server and add them to the array without formatting them?

ONLY if you set a new disk configuration, otherwise they will be re-formatted.

 

Stop the array

Set a new disk configuration (different methods, depending on your version of unRAID)

assign the disks

Start the array

I would recemend a parity check before you stop the old array. just to make sure everything is OK.

Yes... A new disk configuration will not affect existing disks.    It is the one time existing disks properly formatted with unRAID data will be added without clearing/formatting them first.

 

Setting a new disk configuration immediately invalidates parity. so as already advised, before you do anything, run a non-correcting parity check.  If your version of unRAID does not have a non-corrrecting option, run the command from the linux command line instead

/root/mdcmd check NOCORRECT

Type exactly as above.  capitalization is important.
