Process for creating a new config keeping existing zfs pools

I was wondering the correct process to remove the array and keep my existing zfs pools using a new config.

I know you have to create a new config with the array stopped. I currently have just a USB stick with nothing on it that's my array. I have 3 zfs pool, 2 of them are encrypted.

Appreciate the help in the proper steps to avoid data loss.

As long as you leave all the pool devices assigned, or create a new pool and reassign them, Unraid will reimport the pools. Always leave the filesystem set to auto, and all pool members must be present together in the same pool, including any subpools; they will be sorted automatically.

Is it possible to backup the current config and roll back to it if something happens to go wrong?

No reason for it to go wrong if the pools are working, but you can save the /config/pools folder on the flash drive.
